In development — Finland first

Master the embers.

A live-fire Argentine parrilla, engineered for European homes. Built around a real brasero — not charcoal in a box.

DOCTA is currently in development — no grill has shipped yet. Joining the list costs nothing and puts you first in line when reservations open.

01 — Philosophy

This isn't charcoal in a box.

In Argentina, fire and food are prepared separately. Wood burns in a brasero — a firebox set apart from the cooking area — until it collapses into embers. Only then do the embers move beneath the grate, shovelled in by hand, spread thin or piled deep depending on what's cooking.

Nothing about this is automatic. You're not turning a dial — you're managing a bed of coals the way it's done in Córdoba: by eye, by hand, by how the meat responds. That's the difference between fire you burn and fire you use.

02 — The Brasero

Where the fire actually happens.

The brasero is a separate firebox for burning real hardwood down to embers — not a chamber for igniting charcoal in place. It's the part of a parrilla that most conventional grills skip entirely, and the part that makes everything else possible: consistent embers, ready on demand, kept apart from the food until you decide otherwise.

Dimensions and materials are confirmed with our manufacturing partner. What won't change is the principle — a real brasero, not a firebox that only pretends to be one.

03 — Control the Heat

Raise it. Lower it. Own the temperature.

The cooking grate moves — up, away from the embers, for a slow and gentle heat; down, close to the coals, for a hard sear. Combined with grate height and ember position, you control the two things every good asador manages by hand: heat and flare.

No thermostat decides this for you. You do.

04 — Where We Are

Built in the open.

DOCTA is currently evaluating manufacturing partners and finalizing a prototype. We haven't shipped a grill yet, and this page won't pretend otherwise. Everything below is a target — not a finished spec.

  • Two independently adjustable cooking zonesTarget
  • Refractory firebrick-lined fireboxTarget

05 — Argentina × North

From Córdoba to the North.

Marcos grew up in Córdoba, Argentina — La Docta, as locals call it — where cooking over wood fire isn't a weekend hobby, it's just how you cook. After moving to Finland, he spent more than three years working as a professional chef in Lapland — cooking through some of the harshest conditions in Europe. Along the way he found plenty of good grills, but nothing built around a real brasero, and nothing that treated fire as the point rather than a means to an end.

DOCTA started as an attempt to bring that tradition somewhere it didn't exist yet — built for gardens, terraces and cabins across the Nordics, not only for people who already know what a parrilla is.

“I didn't want to sell a grill. I wanted to bring the fire I grew up with.”
